Biography
Dr María García-Aparicio is a researcher with experience in the field of biorefinery. Her objective is to apply the acquired skills and knowledge for the development of alternative and greener industrial processes based on biotechnology. She is evaluating such processes for food waste valorization at the University of Alcalá (Micro-separation Techniques group).
Research summary
María´s research in UAH has primarily focused on the biorefinery assessment of selected plant-based food byproducts in terms of chemical composition, bioactive profile, antioxidant capacity, and enzyme accessibility after different drying treatments. This type of studies is essential to develop technologies for a circular bioeconomy system, resulting in additional revenue for the food-processing sector while reducing its environmental footprint.
